I'm rice-challenged. No matter if I follow the directions on a box of rice to the letter, the rice won't turn out right.
Fortunately, my husband has an innate talent for making rice. He never reads directions. He wings it every time. And the result is always perfect.
Before I met my husband, I had no choice but to make Minute Rice. It's real rice but they do something to it to make it cook quickly. The end result is fairly rice-like.
15-Minute Cheesy Chicken & Rice
Heat 1 tbsp. oil on medium-high heat. Add 4 boneless, skinless chicken breast halves; cover. Cook 4 minutes on each side or until cooked through. Remove from skillet. Add 1 3/4 cups water; bring to boil. Stir in 2 cups Minute Rice, 2 cups broccoli flowerets and 12 oz. cut up Velveeta processed cheese product. Top with chicken; cover. Cook on low heat 5 minutes. Stir. Serves 4.
10-Minute Santa Fe Rice
Boil 2 cups water in saucepan. Stir in 2 cups Minute Rice, 1 cup drained canned black or red beans and 1 cup salsa; cover. Cook on low heat for 5 minutes. Serves 4.
